Makes about 2 cups.
INGREDIENTS
(raw, unsalted nuts and seeds preferred)
½ cup pumpkin seeds
¼ cup sunflower seeds
½ cup cashews
2 tablespoons chia seeds
2 large egg whites, at room temperature
1 teaspoon curry powder
½ teaspoon turmeric powder
½ teaspoon sea salt (optional)
Pinch cayenne pepper
Pinch stevia powder (optional)
DIRECTIONS
-Preheat oven to 300 degrees F. Line a baking sheet with parchment paper and set aside.
-Combine the nuts and seeds in medium bowl. Place the egg whites in a small bowl and whisk in spices until frothy.
-Pour the egg white mixture into the nuts and seeds, mixing to coat well. If mixture is too runny, add another teaspoon of chia seeds as needed. Transfer mixture to prepared baking sheet, spreading evenly in ¼ inch layer.
-Bake in preheated oven until golden brown and crisp - 25 to 30 minutes. Remove from oven, let cool before serving. Store in an airtight container for up to 1 week.
